Why this Ice Cream Addict has a New Addiction: Ice Cream Sandwiches

Happy National Ice Cream Month!! I look forward to this month all year! No seriously, I do. It is a great excuse to eat ice cream everyday (not that you need an excuse!). And with a blog, I absolutely have to eat ice cream everyday so I can post about it. I really love ice cream. At one point in high school, I thought I was addicted to it. I would have it every night, every SINGLE night. And if I didn’t, I would be pretty upset. I get my love of ice cream from my Dad. He REALLY REALLY loves ice cream. Just this weekend, I tried to describe his love of ice cream to someone. Their response, “You could write a whole blog post about that!”. While this blog post is not all about his love of ice cream, I do think his nightly ice cream concoction (as we call it) is worth mentioning. The best one I have seen is as follows. He starts with a drumstick. Yes, I know that is a whole dessert for a normal person. My Dad is not a normal ice cream eater. He is expert level. So from there, he adds his favorite ice cream of the moment. He continues with adding different varieties of cereal. And of course he has to add milk because who eats cereal without milk?! If his favorite daughter has made cookies, he will add one of those (whoever makes cookies is his favorite daughter). And finally, if my Mom can convince him, he will add some mixed berries because that is healthy. And he tops it off with whipped cream. UNREAL! So this blog post is for you, Dad, one of the many amazing dairymen in my life!

Ice Cream Sandwich from the Baked Bear
Ice Cream Sandwich from the Baked Bear

Last month, my husband and I went to a beautiful wedding in Napa. This couple had the genius idea to ditch the wedding cake and do something brilliant. They had an ice cream sandwich bar from The Baked Bear! It was one of the highlights of my weekend. There were a couple different cookies, ice creams and toppings to build your own ice cream sandwich. I went with one funfetti cookie, one chocolate chip cookie and cookie dough ice cream. **Mind blown** I have not been able to get this ice cream sandwich out of my head. For the last month, I have searched high and low for something that would compare to that night. Well I think I have found it! And the best news is, you can build a bunch of these ice cream sandwiches at one time and then wrap them up in foil and put them back in the freezer. You can take a couple out at a time to have with your little ones to beat the afternoon heat or make ahead to serve at a party.

Here is the scoop on this recipe. We are going to start with funfetti cookies. I found the best recipe at Cookies and Cups called Super Soft Sprinkle Pudding Cookies. I added about a tablespoon of milk after I added the sprinkles because the dough was not sticking together. I also had to cook them for the full 10 minutes. And while they were cooling I pressed them down a little with a spoon. I wanted them to be a little flatter (less fluffy) for the sandwiches. This cookie worked great because the pudding keeps it soft and chewy even when it is frozen. For the ice cream, I used Lucerne Birthday Cake flavor. Here are a few tips I learned when making the sandwiches. Let the cookies cool completely and then put the cookies back on the cookie sheet and set them in the freezer for 10-15 minutes. Make sure the ice cream is really cold. And lastly, wrap the ice cream sandwich in foil as soon as you finish assembling it and put it back in the freezer to harden before eating. They melted a lot faster than I was expecting! We went a head and made a few extras to keep cool during these 106 degree temperatures and to share with friends. These were super fun to make with the little one. G loved adding the sprinkles and of course, eating them! I hope you all enjoy them as much as we did!
